Summer Melon Salad With Honey Citrus Dressing

Perfect for a family reunion picnic or other summer gathering.

  • 1 large cantaloupe
  • 1 medium honeydew melon
  • 1 medium cassava or canary melon
  • 1 small seedless watermelon
  • 2 medium bunches of seedless red grapes

Make 1″ balls out of the . Mix together approximately equal amounts of each kind of melon, along with stemmed and cleaned grapes. Chill thoroughly.

Honey Citrus Dressing

  • 1/3 cup orange marmalade
  • juice of 2 limes
  • 2 tablespoons of honey
  • Pinch of salt

Heat together all ingredients in a small saucepan (or in the microwave) to a simmer, stirring constantly. Adjust sweetness/tartness. Strain through a strainer to remove the marmalade peel, allow to cool but do not chill or it will jell. If the dressing does jell, microwave briefly, enough to remove the set but not enough to heat it.

Divide melon salad amongst chilled serving bowls, lightly drizzle with dressing and serve without a moment’s hesitation.
